Sonneblom Energy Squares

One of our clients sent us this email and recipe (seems we are not the only ones who use a lot of Deli products...)

Being a long-distance runner am always looking for something semi healthy to snack on.  After numerous iterations we developed our own “Energy Squares” as per recipe below.

Named current recipe “Sonneblom Energy Squares” as all ingredients are available from the Deli @ 42.  My favourite at the moment as tasty, crunchy and not too sweet.


  • ½ Cup White Sesame Seeds
  • ½ Cup Black Sesame Seeds
  • ½ Cup Pumpkin Seeds
  • ½ Cup Sunflower Seeds
  • 375ml Coconut
  • ½ Cup Dates (Chopped up)
  • ½ Cup Cranberries (Chopped up)
  • 125ml Peanut Butter
  • 150ml Honey
  • 125ml Brown Sugar
  • 5ml Vanilla Essence


  • Preheat oven to 160⁰C
  • Spray a 32 x 23 cm baking tray with non-stick spray (or line with wax wrap)
  • Combine all seeds, Coconut, dates, cranberry and Sugar in large mixing bowl
  • Blend peanut butter and honey in a glass bowl then heat in microwave till honey slightly melted add essence

  • Mix well then Pour mixture over dry ingredients and mix all together very well
  • Turn mixture onto prepared baking tray, pressing down with back of a spoon
  • Roll mixture with rolling pin ensuring it is pressed firmly into baking tray
  • Bake at 160⁰C for 25 minutes – Remove from oven and cool
  • Cut into squares before cold – Allow to cool completely before removing from baking tray
  • Makes ± 48 Squares - Store in air tight container to keep crunchy texture
