Cellulose Fibre: All plant based materials contain cellulose as it provides structure and strength to the plant. It is listed as an ingredient in almond baking flour since the almonds are grounded with their skins still on (the thin brown layer). The skins of the almonds have a higher concentration of cellulose than the almonds themselves. It is completely natural and not at all harmful to humans or animals. Humans cannot digest cellulose fibres, but it still very good for digestion. It also absorbs the fat in the almonds, making it more like a flour and less like a paste.
